Mt. Fuji cuts ribbon, already going strong

Mt. Fuji Steak and Sushi might have been a long time coming, but it is definitely coming at the right time. The hibachi restaurant found a great location next to Publix at the corner of Lebanon Rd. and N. Mt. Juliet Rd., and decorated the inside beautifully, equipped with many handmade items, including the bar and tables.

“The area is in need of a really great Hibachi,” said General Manager Tiffany Kilmer.Kilmer left a very secure job to take the position at Mt. Fuji. “It was really scary for me,” said Kilmer. 

When she walked into the place, it became a lot easier. Orion Fox and Kelly Working had went all out on the decorations, much of it they did themselves. Add that to the location, and Kilmer felt she had an opportunity to make something special. 

Fox and Working told Kilmer that they were ready to open. 

“I asked ‘do we have a staff’” said Kilmer. They responded no, but they were going to open, and they needed to find one. 

Kilmer put an ad out on, and two weeks later the staff was assembled. 

Kilmer said she is happy with the food and staff they have gotten together. 

“The food quality is second to none,” said Kilmer. She said the cooks “are so fun. The sweetest men you will ever meet.”

The menu is filled with lots of different choices, and Mt. Fuji does some things different than others. For one, they put bread and potatoes in with their vegetables, something most hibachis don’t do. They give you big helpings of food, more than you can fit on a plate, so you have to eat up to make more room. 

There are several different types of rolls to choose from, and you can even customize your own rolls because everything is made fresh to order. 

There is also a beer and wine list with several different options. 

There is a dining area and bar when you walk in and your traditional hibachi rooms beside them. 

“What better place to spend with eight of your friends,” said Kilmer. 

She said they wanted a more intimate feel, because they wanted you to feel welcome.

“We are not corporately owned for a reason,” said Kilmer. 

Mt. Fuji is located at 11219 Lebanon Road in the Publix shopping center. They are open Monday through Thursday, 11 a.m. to 2 p.m. and 4 p.m. to 9 p.m., Friday and Saturday 11 a.m. to 2 p.m. and 4 p.m. to 10 p.m. and Sunday, 11 a.m. to 9 p.m. They can be reached at (615)288-2390.
